I left Noah and Mario in charge to spend a weekend at Giovanni’s vineyard. We were well into menu development and would launch Carne in late August, making bank for two months with fall seasonal specialties at the end of the season when tourists mainly comprised retired couples and singles.
Giovanni sighed.
“What’s wrong? Don’t you like my launch plan?”
“November will be quiet, Carla.”
“January and February will be dead. December will be a good month.”
“Many seasonal business owners close, travel, and have fun after the New Year’s Day celebrations, then reopen in March.”
“Easter comes late this year… 20th April. Last year it was 31st March. That’s a big impact, too.”
